People will pestle the braised sticky rice in a stone mortar until it become soft and flexible and they will take the advantage of the heat to make the rice into proper pastes. The pastes are edible after it rolled with sesame powder and white granulated sugar. The cooked pastes are sesame glutinous rice cakes. They are fresh and tender, exquisite and some times are stuffed with fillings. Wuyishan glutinous rice cakes are quite famous. There are usually many venders hawking such rice cakes on streets and they have become a view of Wuyishan streets.

Wuyishan Cudweed Herb Cakes (Shuquguo)
This is a sort of snack made of cudweed herd and sticky rice. The cudweed herb has medicinal functions such as relieve a cough and restrain the germ growing. People of Wuyishan would like to have such cakes during the Tomb Sweeping (Ching Ming) Festival. The Shuquguo is a excellent dim sum made by Wuyishan people. They will pick the fresh cudweed herb before the Ching Ming Festival and pound them. Then they mix the cudweed herb juice with sticky rice paste and braise them. Some cakes are stuffed with fillings such as chopped mushrooms, bamboo shoot, meat, preserved vegetables and so on, and the cakes turn into larger green dumplings. Wuyishan Wonton (Bianrou)
Wonton of Wuyishan named Bianrou in Chinese can be divided into over 20 species according to different fillings, cooking methods, ingredients, and eating methods. There are boiled wonton, deep-fried wonton, quick-stirred wonton, shrimp meat wonton and so on. Wuyishan wonton (Bianrou) featuring thin and nearly transparent skin and thick stuffing is a very popular food. Wuyishan wonton soup has faint scent.
