Huangshan Local Delicacies (what snacks to eat in Huangshan)
Huangshan local snacks mainly are made of flour and soy. Local delicacies made of flour major are all kinds of cakes; and snacks made of soy mainly are tofu products. Huangshan Shitouguo or Huizhouguo(Stone Pastry)
Shitouguo is a kind of special local pastry of Huangshan. It is also the traditional flour food in Huangshan. The pastry is baked in a pan and pressed by stone, so it is called Shitouguo literally means stone pastry. The fillings of stone pastry are chopped streaky pork and stir-fried soybean powder. Then use pastry to wrap the mixed fillings and nip to close up. The pastry need to grind into round cake by wooden stick. At last, put pastries in a pan and put a stone on each pastry. The stone (tailor-made brick) is used to heat pastry equably and make the fillings cooked fully. After a bite at the pastry, you can feel a pleasing aroma given out by pastry.

Guo is regarded as pastry or pie in conception of Huizhou people. Baolu is the name of corn in Chinese called by Huizhou people. Baoluguo literally means hotcake with stuffing. Huizhou as part of Huangshan locates at the southern part of Anhui Province. It is rich in corns. Huizhou people have corn conjee in the morning. In daybreak in Huangshan mountainous areas, you will hear cadent "peng"-striking table sound from every family. That sound is made by housewives who are making "Baoluguo (hoecake with fillings)" in kitchen. Corn cakes are baked in a pan. Cooked Baoluguo is golden and crisp outside. The pastry of Baoluguo nowadays is often added with eggs. Fillings are varied from vegetables, meats, and fruits. Baoluguo in fact is a kind healthy and nutrient food. Methods of making hoecakes are different in different seasons. Fillings for Baoluguo in winter and spring are pickled vegetables chopped with cayenne, garlic and ginger, etc. In autumn and summer, the main stuffing is fresh vegetable.

Huangshan Chengguantang (Weighbeam Liked Candy)
This is a kind of famous caramel product. Its name "Chengguantang" is the description of the shape of this candy in Chinese. As it looks like a sheared off weighbeam, it is called weighbeam liked candy. Chengguantang is made of malt sugar and sesame. You will see the pipe liked malt sugar wrapped with gingili. The white core of this candy is made of white sugar, rice flour and sesame flour. Huangshan Chengguantang features crisp, sweet-smelling and sweet taste. It is a nice candy for people from elder graybeards to children.

Huangshan Huizhou Tzung Tzu
Tzung Tzu is very popular dish during the Dragon Boat festival. Huizhou Tzung Tzu is the famous folk snack of Huangshan. Tzung Tzu also named rice dumpling are widely extend in everywhere of China, but, Tzung Tzu of Huangshan is unique. It is special in wrapping method, shape and content. Most Huizhou tzung Tzu are pillow shaped tzung tzu. Huangshan Huizhou Tzung Tzu is long, fat and fleshy. With four angles, Huangshan Tzung Tzu are varied in category such as meat tzung tzu, chop tzung tzu, jujube tzung tzu, sweetened bean paste tzung tzu, red bean tzung tzu and so on. One more Huangshan Huizhou Tzung Tzu is worthy of mention-Huizhi Tzung Tzu. Huizhi Tzung Tzu is made of special water mixed with sticky rice. The water is the filtrated water by plant ash. Strong alkalescence and glutinosity enable Huizhou Tzung Tzu of Huangshan is fairly tasty. Huangshan Huizhou Tzung Tzu is a nutrient, fast and flavorful food for junketing.

Huangshan Jixicaigao Cake
Jixi is a county next to Huangshan District of Huangshan City and it is the homeland of Jixicaigao Cake. Main material of Jixicaigao cake is sticky rice. The sticky rice is firstly become thoroughly soaked or saturated with water. When it is thoroughly soaked, it is pounded to pieces in stone mortar and screened by sieve. The sticky rice at last should be processed into rice flour and be stored after dried by sunshine. Ferment the sticky rice flour by adding some water and sparklet wine. Jixicaigao Cake is divided into two tastes: sweet cake and salty cake.

Meigan Moon Cake is the special local products of Huangshan produced in Xiuning County. Xiuning County located in southern part of Anhui is about 18 km away from Huangshan downtown area. The scarfskin of the moon cake is made from top grade flour and vegetable oil. Filling of Meigan Moon Cake is made of potherb and leaf fat and white sugar as well. Huangshan Meigan Moon Cake is different from Cantonese moon cake and Suizhou moon cake. Huangshan Meigan Moon Cake with faint scent is soft and crisp and also rich in nutrition.

Huangshan Doufulaoshu
Doufulaoshu is a kind of delicious snack of Huizhou in Huangshan. Major materials of Doufulaoshu are quality lean meat and bean curd. Lean meat and bean curd together matched with ginger, egg and are chopped into paste. The paste will be rolled on flour and become a white ball. Then boil the balls in water until they are floated on water surface. Put the balls on fresh soup with seasonings. Doufulaoshu is tender and fresh in taste which is suitable for both the young and the old.

Huangshan Wax Gourd Dumplings
Wax gourd is the main filling of Huangshan wax gourd dumpling. The wax gourd dumpling created by Tunxi Yingchun Guan has a history of 100 years. Yingchun Guan is a famous old restaurant in Tunxi, Huangshan. Fillings of the dumpling are max gourd and assistant materials such as pork, ham, Chinese mushroom and sesame oil. Huangshan wax gourd dumplings with refreshing flavor are wonderful snacks in summer.

Huangshan Kudzu Starch Ball
Kudzu starch is the powder of pueraria root or kudzu root. Kudzu root has been made into balls by Huizhou people for nearly a thousand years. Kudzu starch ball of Huangshan is similar to famous meat balls in China. Huangshan kudzu balls are natural food as the materials are wild kudzu from Mountain Huangshan. Kudzu balls are not only smooth and flexible in taste, but also are full of abundant nutrition. Necessary material of cooking kudzu ball is kudzu starch or kudzu powder which is from the root of kudzu. Mix the kudzu root starch and water into smooth paste is the first step. The next step is to stir-fry the paste together with other ingredients including sliced bamboo root, sliced Chinese black mushroom, sliced ham, sliced dried bean curd and sugar, thin soup or soup-stock, cooking wine or sake, vegetable oil and salt. The paste is stir fried until it changes into transparent state. Then, the last step is to nip the transparent paste into many balls and steam them in bamboo basket for ten minutes. Kudzu starch balls are traditional food for entertaining guests in Huizhou, Huangshan.

Huangshan Huizhou Farfalle
Huizhou farfalle called "Hudiemian" in Chinese literally means the butterfly like flour product. It is said, Hudiemian is a very famed noodle in Huizhou, a district of Huangshan. Many people would think Huizhou farfalle is one of Italian pastas. Their thoughts are wrong. Here, the most famous Huizhou Hudiemian (farfalle), is the local special food of Huizhou, Huangshan. Huizhou farfalle is firstly be deep-fried in vegetable oil and then stir fried with sliced pork, bamboo root, shrimps, sliced ham and green vegetables. At last add some broth into it to braise for a while is ok!

Huangshan Edible River-snail
There are many streams running though Huangshan. These streams are clear and teeming with edible river-snail. The edible snails are unpolluted natural food. High quality edible river snails are stir-fried and braised with many ingredients including vegetable oil, salt, shallot, ginger, vinegar and so on. Laba refers to the 8th of December in China lunar calendar.Huangshan He County people make Laba bean curds before or after that day. Laba bean curd can be regarded as a traditional food for Chinese Spring Festival. Laba bean curd looks like a round cake in shape and is reddish brown in color. There is also a round concave in the center. Huangshan Laba Bean Curd is salty, sweet, fresh and fragrant. It can be made into cold dish, and can be cooked with other dishes too. Huangshan Cranberry Rice
Cranberry rice is also called black rice because of the color. Cranberry rice is a kind of sticky rice meal in black and purple color. The special color of the rice comes from the blueberry leaf as the sticky rice is firstly soaked in juice of blueberry leaf. Huizhou (Huangshan) persons have the cranberry rice on every eighth day of the forth lunar month. That is an annual celebrated day that marks and honors the birth of Sakyamuni-the founder of Buddhism. Huizhou (Huangshan) people believe having cranberry sticky rice can get rid of disease evil of summer. Some villages of Huangshan nowadays still keep the tradition of having cranberry rice.
